Vegan pancakes

You’ve stopped drinking milk, eating beef, wearing leather and cooking with eggs. But shit, now it’s Shrove Tuesday and you’re really regretting announcing to the world you are now #EatingPlantsNotAnimals

Don’t panic! I have the best ever (probably) vegan pancake recipe which taste JUST like normal pancakes – the thin, crepe kind, not American fluffies.

You need:

  • 1 cup oat milk (probably would work with other non dairy milks, I just drink Oatly)
  • 1/2 cup plain flour
  • 1tsp baking powder
  • 2 tbsp water
  • 1 tbsp veg oil (or any other liquid oil you usually use)
  • 1tsp egg replacer (I use Free and Easy)

In a large bowl mix together the plain flour and baking powder, then pour in the milk and oil – stir or whisk together (I like to whisk).

Mix the water and egg replacer in a small separate dish to begin with, then stir/whisk that paste into the main mix (you can get this from most health food shops like Holland & Barrett or independent health stores – I got mine fromΒ Gluten Free Food StoreΒ in Diss, Norfolk).

If the consistency is too thick, add a drop more water or milk or if it’s too thin, add a touch more flour. The consistency should be fairly runny so you can pour it but not so it resembles a liquid.

Heat a pan with a tiny bit of oil (there is oil in the pancakes so not much at all) and spoon in 1/4 cup of mixture at a time, spread it around the pan and cook until lightly golden on both sides.

Top with whatever you like and enjoy!! I am a classic lemon and sugar girl, but I do enjoy the odd savoury one (sriracha mayo pancake anyone?) What do you top yours with?
